Skinny Funfetti Dip

One of my biggest downfalls is my sweet tooth, I almost always crave something sweet after dinner and it's so hard to say no. So, I love it when I find yummy sweet recipes that are lower in calories and fat. Bonus points for being super easy to make too! I found this recipe on Pinterest, and knew it'd be a huge win.


Ingredients

1 box of funfetti cake mix
2 cups of non-fat greek yogurt (I always use Oikos "Uncle Jesse" yogurt, as it's the only non-fat greek yogurt without sucralose)
1 cup of lite or fat free cool whip
Animal crackers for dipping

Directions

Combine all ingredients until well blended and refrigerate for a few hours before serving.
Serve with animal crackers and enjoy!
Refrigerate any leftovers

Spring Cleaning Weekend

**First things first - if you have my URL saved in your browser as peridotkutie.blogspot.com please note it has changed to greenfashionistablog.com. Yes, I have finally purchased a domain, and it gets redirected to my old URL. Still trying to figure out how to not just be re-directed, but for my domain to be the main URL**

Oh Monday we meet again, but I'm not complaining as much as usual because I actually feel refreshed and ready to take on the week. It was unseasonably cool this weekend which meant relaxing outdoors with good friends and some good ol' fashioned spring cleaning with all the windows open.


I started off my Friday with 25% off my iced skinny vanilla latte with a reward on my app, while sifting through some of the business cards I picked up at last week's blogger meet and sweet.


Lunch time called for a stop at Trader Joe's to restock on cookie butter and cheap wine. I also picked up a bundle of daffodils for only $1.49... TJ's you win again! 


Later, I met up with some friends I hadn't seen in a while for some happy hour outside. Good fattening food, drinks, and laughs are always good for the soul. Afterwards, we made our way over to World of Beer for one last drink where I tried their beer mimosa which was delish!


Saturday made way for a beautiful bike ride before a Target run and heading over to a friend's to continue our Harry Potter marathon in their home theater.


After Sarah mentioned the limited edition birthday frappuccino, I knew I had to pick it up when I was at the Target Starbucks, and it was delish! Today, is the last day so if you haven't tried one yet go get one! And don't be afraid to ask for them to make it with skim milk to help lessen the calorie bomb!



The girls enjoyed lots of some wine while the guys drank their manly beers, and we munched on dips and grilled out before saying goodbye to the beautiful sunshine and hello to the dark theater for some HP time.


Sunday called for some spring cleaning and a few new beauty items.

I feel like none of the primers I've been using work. They either leave my face in a total oil slick still or cause me to break out even worse than I already am... really not cool. So, I decided to try out a cheaper primer when I saw e.l.f.'s poreless primer at Target for only $6. If it doesn't work, at least it's not as much as the $30-$40 primers I've tried that haven't worked. 

I also picked up Essie's new Flowerista from their spring 2015 collection, and it's just as beautiful in person as it is online. Definitely a must buy!

I felt like this week dragged, so I am welcoming this lovely Friday with open arms! A long week though means there were a lot of favorites to love!

1. My latest Rocksbox came in, and the pieces are gorgeous! I may need to cash in some more credits soon...



2. Wednesday night I attended the Orlando Blogger Meet and Sweet, and hung out with Deborah and Heather. We mingled with other local bloggers while enjoying sweets from the various vendors. Such a neat event, looking forward to the next one in the summer.




My favorite was the organic cotton candy made with real sugar cane. I got the lemon berry which was flavored with strawberry flakes and zest of lemon.


3. I was excited to receive my candles from Leeann's giveaway. My Old Factory candles arrived, and they smell amazing. I chose the "vacation" set which includes Sea Breeze, Hawaiian Lei, and Awapuhi. My favorite part is that the candles are made from soy!


4. Happy to be back in my workout routine after being away. I made my return to Barre3, and enjoyed yoga twice at work this week. 



5. Well it's official... I've officially become addicted to a new "trashy" show. I watched the first 2 episodes of the new show The Royals, and I'm officially hooked. I feel like it's the perfect cross between Gossip Girl and Tyrant

I mentioned here about what happened after I ordered these beautiful sequined pants. My size was out of stock, so my order was cancelled. I then called customer service, and they told me the next size up was available plus they gave me an extra discount for the inconvenience. After my rant in yesterday's post about Carnival's lack of customer service this was a pleasant surprise, and the perfect definition of how to keep customers happy.

Baked Southwestern Egg Rolls

Baked Southwestern Egg Rolls

One of my favorite appetizers when going out to eat are southwestern egg rolls, so when I stumbled upon this recipe I knew I had to try it out.

Ingredients

1 package of egg roll wrappers
1 can of no salt added corn, drained
1 can of reduced sodium black beans, drained
1 can of diced chilies, drained
1 package of frozen spinach, thawed
1-2 cups of reduced fat mexican blend cheese
4 green onions, diced
1/4 cup of cilantro
1/2 tsp. of pepper
1 egg, beaten
Guacamole for dipping



Directions

Preheat oven to 425 degrees
Mix all ingredients except for egg roll wrappers and egg in a large bowl
Spoon out mixture onto egg roll wrappers, and roll together until sealed
Brush egg on top to seal it closed
Bake for about 15 minutes at 425 degrees
Serve with guacamole and/or sour cream

Another beautiful weekend bites the dust...

Friday night was spent with my favorite neighbors in their beautiful pool and hot tub. We hadn't gotten together in far too long, so it was nice to play catch up over a lot some drinks.



Saturday was pretty much a wash for me, I was nursing one of the worst hangovers I've experienced in a loooooong time. I cancelled movie night plans with friends, and was only able to lay by the pool during the day and make it out for a quick bite and some grocery shopping *how exciting* that evening. I tried some "hair of the dog" at dinner, but it was nursed big time and didn't help at all. Needless to say I was in bed by 10:00... I officially can't hang anymore.

Next time someone pours you fireball just say NO! Just like the saying "nothing good happens after midnight" well folks "nothing good happens when doing fireball shots". There's your words of wisdom for the week.




Sunday, after a fantastic night's sleep I felt like myself again and was ready to take on the day which started with chocolate chip pancakes on the patio before heading off to the beach.

Happy first day of spring! Coming off of vacation into a full week of work is rough with a capital woof. But I made it, and am looking forward to some beach and/or pool time this weekend with some drinks imagining I'm still sailing the Caribbean. 

1. I discovered a paddle boarding place near my job and frequent lunch spots, and now all I want to do is go paddle boarding at lunch. How amazing is that?

2. I cashed in my free workout from Orange Theory when they came to my job a few weeks ago, and it was no joke! An amazing sweat inducing workout that'll keep burning calories even hours after the workout is over.



3. I finally cashed in some credits at Rocksbox, and purchased the Perry Street Crystal Floral Necklace. I wore it throughout the holidays, and knew it was a keeper. 


4. I almost completely forgot it was St. Patrick's Day this week since it was right after getting back from vacation, and I was not yet back to reality. But I did remember to wear a splash of green on Tuesday, which I'm glad I did because everyone else at work was also festive.
